Immerse yourself in the essence of fall with a tantalizing Cranberry Apple Galette.
This rustic creation harmonizes the sweet-tart dance of cranberries and spiced apples within a flaky, golden crust, inviting you to savor the simple pleasures of homemade goodness.
Ingredients:
Galette Dough:
2 ½ cup flour
1 tsp salt
1 tbsp sugar
1 cup butter finely diced.
½ cup ice cold water
2 eggs [egg wash] Turbinado sugar
Apple Filling:
2 tbsp whipping cream (30–35 g)
4 granny smith apples
¼ cup dried cranberries
2 tsp freshly squeezed lemon juice
1 Tbsp honey
¼ cup brown sugar
½ tsp cinnamon
½ tsp vanilla
Preparation:
For the Dough:
- Put the flour, salt and sugar in a food processor and pulse 2 -3 times to mix.
- Add the diced butter and pulse on high until everything looks like crumbly sand.
- Add the ice water and continue pulsing until a rough dough forms.
- Remove the rough dough from the food processor and lightly knead together and form into an 8-inch-long log of dough.
- Chill for an hour before rolling out the dough.
For the Apple Filling:
- Peel, core and thinly slice the apples into a large mixing bowl. Tossing in lemon juice as you go.
- Add the cranberries, remaining lemon juice, honey, brown sugar, cinnamon, vanilla, and massage the ingredients together with your hands.
- Set aside.
Assembly:
- Pre-heat the convection oven to 350°F
- Cut a ½-inch thick disk of dough and roll the disk into a 5" round circle, approximately 1/8" thick.
- Brush the egg wash onto the disk and spoon some filling onto center of the round.
- Fold the outer edges of the dough round over the filling, by about 2-inches all the way around, and pinch edges in an accordion fashion.
- Brush with more egg wash butter, sprinkle with turbinado sugar and place onto parchment-lined baking sheet. Keep raw galettes chilled until ready to bake.
- Continue the same process until all the filling or dough is finished.
- Place the galettes in the oven and bake for about 20 to 25 minutes or until center cooked and crust is golden.
