Almond-Crusted Goat Cheese Salad with Raspberry Dressing

A Delightful Blend of Creamy Goat Cheese, Crunchy Almonds, and Sweet Raspberry Dressing

This fresh summer salad is perfect for a light lunch or an elegant appetizer, offering a balance of textures and flavours that will impress any guest. 

Showcase the capabilities of your Miele oven with this unforgettable dish. Almond-crusted goat cheese bakes to a warm, crunchy exterior with a creamy interior. Paired with fresh salad greens and homemade raspberry dressing, it's both visually appealing and deliciously satisfying.

Ingredients:

⅔ cup raspberries
½ cup sugar
¼ cup red wine vinegar
2 tablespoons minced red onion
1 tablespoon dry mustard
½ teaspoon lemon juice
1 cup olive oil
2 5oz logs of soft fresh goat cheese
1 large egg
1 tablespoon water
½ cup sliced almonds
Salad greens

 

 

Preparation:

  1. Blend raspberries, sugar, red wine vinegar, onion, mustard and lemon juice in processor. With processor running, gradually add oil.
  2. Preheat oven on convection to 320°F.
  3. Whisk egg and 1 tablespoon of water in small bowl to blend.
  4. Place almonds in shallow dish. Using large end of melon baller, roll goat cheese into small balls. Dip into egg mixture, then roll in almonds to coat, pressing gently to adhere. Place cheese on Miele baking tray. Sprinkle with salt and pepper.
  5. Bake until almonds are lightly browned about 5-7 minutes.
  6. Divide salad into individual servings top each with 2 warm cheese rounds.
  7. Drizzle with dressing; serve.
