Steamed Salmon & Asparagus with Orange/Lemon Sauce

A Healthy and Flavourful Meal Topped with a Zesty Orange and Lemon Sauce

Elevate your dinner and bring summer to your plate with this quick and easy salmon recipe, topped with a refreshing orange and lemon sauce. 

Be transported to al fresco dining by the Mediterranean seaside. With Miele Steam Ovens, asparagus turns out tender and crisp, and salmon cooks to flaky perfection. Paired with a fresh citrus and tarragon sauce, each bite is bursting with flavor.

Ingredients:

4 6oz salmon filets
1 ½ bunch of asparagus, trimmed (1 ½ lb)
2 large egg yolks, hard-boile
1 raw egg yolk
1 teaspoon lemon juice
1 tablespoon orange juice
1 pinch salt, and pepper
1/2 cup olive oil
1 egg white
1 orange, sliced
1 lemon, sliced
1 Bunch of fresh tarragon chopped

 

Preparation:

  1. Place Salmon in a solid steam tray skin side down.
  2. Set Steam oven function to Salmon and select appropriate settings for desired cooking.
  3. Remember to deduct 3 minutes for the last 3 minutes for including Asparagus.
  4. Add Asparagus for the last 3 minutes of cooking.
  5. Take Salmon and Asparagus out and serve with Orange & Lemon Sauce.

 

For Sauce:

  1. Chop the hard-boiled egg yolks and mix with the raw egg yolk
  2. Add the orange and lemon juice and season with salt and pepper
  3. Gradually add the olive oil, beating as if for mayonnaise.
  4. Check seasoning to taste.
  5. Beat the egg white until stiff and add to the sauce
  6. Finish with chopped tarragon
