Simple yet elegant, this recipe brings out the natural sweetness of the carrots in a way that's both comforting and refreshing. Tender baby carrots, gently blanched and then roasted to caramelized perfection, are coated with a luscious honey glaze and infused with the richness of turkey stock.
Ingredients:
1lb baby carrots with green tops
⅓ cup turkey stock
2 tbsp honey
1 tbsp chopped parsley
1 tbsp chopped chives
Fresh lemon
Preparation:
- Using your Miele Combi-Steam Oven on the blanch setting (under Special Modes), blanch the carrots, cool and set aside in a mixing bowl.
- Toss the remaining ingredients with the carrots (minus the herbs).
- Lay contents of the bowl on a small sheet pan or solid Miele Tray.
- In a full-size / 30" Miele Convection Oven:
- Select Operating Modes
- Select Moisture Plus
- Select Moisture Plus + Convection Roast at 350 ºF
- Set timer duration for 10 minutes
- Select Automatic
- Cook for 10 minutes until the carrots begin to caramelize but ensure they are not block
- Sprinkle with herbs, a squeeze of lemon and serve.
